Hamish Grierson, a University of Edinburgh graduate, launched Plainfield after struggling with Crohn’s disease. His personal experience drove the creation of a cottage cheese that fits into a lactose-free diet without sacrificing taste or nutrition. Grierson’s background in entrepreneurship and finance helped shape the business, while his course Spine Sweat earned him the Best Business Plan Award.

The product’s appeal became clear early on. A pop-up event sold out instantly, leaving many customers on a waitlist. Meanwhile, a social media campaign racked up over 40,000 views in just 20 days. Local support from Bloomington’s Innovation Center also played a key role in Plainfield’s rapid growth. Now, the company is setting its sights on national expansion. Plans include stocking shelves in major supermarkets and developing more lactose-free dairy options. The goal is simple: turn Plainfield into a trusted name for healthy, no-compromise food.

Plainfield’s early success points to strong demand for lactose-free, protein-rich dairy. The company’s next steps involve scaling production and securing wider retail distribution. If all goes to plan, its cottage cheese could soon become a regular feature in kitchens across the country.
